Hickory-Mesquite Mango Pepper Ribs

I wanted ribs but I also wanted to use up a mango I had around the house, so I came up with this delicious concoction.  Enjoy :)

Ribs
Ingredients:
1/2 package ( 6-8 pork ribs bone-in)
Seasoning (Roaster Garlic, Barbecue, Hickory Smoked Balsamic, Crushed Red Pepper)
1 1/2 Cup Apple Juice
1/3 Cup Hickory Flavored BBQ Sauce
1/3 Cup Mesquite Flavored BBQ Sauce
1 Large Mango (Peeled, Cored & Chopped)
1 Orange Pepper (Seeded & Chopped)

Directions:
Preheat oven to 350.   Pour the apple juice into a deep narrow pan (I used a meatloaf pan.)  Generously season the ribs and put them into the pan.  Add the mangos and then the peppers on top of the ribs.  Drizzle the BBQ sauce over the top.  Cook for an hour, turn off the oven and let sit for another 15 minutes.  Remove and serve.  Enjoy!

Cinnamon Honey Butter
Ingredients:
3/4 Cup Butter (1 1/2 Sticks, softened)
5 Tbsp Honey
5 Tbsp Powdered Sugar
5 Tbsp Heavy Cream
1-2 Tbsp Cinnamon

Directions:
 Add all ingredients together and mix with a hand mixer until smooth.


Add the apple juice to the pan
Add the ribs

Generously season the ribs
Add the mangos on top
Now add the peppers
Drizzle the BBQ sauces on top and stick in the oven

Add the butter ingredients to a mixing bowl
Mix thoroughly
Remove ribs from the oven and allow to cool for a few minutes

Serve & Enjoy!

Brown Sugar Bourbon Ribs

These were delicious, but I must apologize about the pictures, I was in a frenzy trying to do too many things at once in too little of time.  I did get dinner served just fine, but the pictures reflect the craziness. 

Brown Sugar Bourbon Ribs

Ingredients:
Rack of boneless pork ribs
Brown Sugar
Honey
Seasoning (Brown Sugar Bourbon Rub, Alpine Touch, Spicy Montreal Steak Seasoning)
1/3 Cup Champagne Vinegar
1-2 Cups Apple Juice
Kentucky Bourbon BBQ Sauce

Directions:
Preheat the oven to 325 degrees.  Season the ribs and place in deep oven safe pan.  Sprinkle brown sugar on top and drizzle honey across.  Add the vinegar and apple juice until covering the rips.  Generously pour the BBQ sauce on top and cook for 90-120 minutes.  Once the BBQ on top starts to bubble they should be done.  Meat thermometer should read 125 degrees for done or higher.

Cheesy Broccoli

Ingredients:
1 1/2 Cups of Broccoli (Separated from the head)
1/4 Cup Milk
1/2 Cup Cheese
Alpine Touch

Directions: 
Boil the broccoli for about 5 minutes.  Strain the water and turn the heat to low.  Add the milk and cheese and stir until cheese is melted and broccoli is thoroughly coated. 

Cinnamon Honey Butter

Ingredients:
8 Tbsp Butter (1 Stick softened)
2 Tbsp Honey
1 1/2 Tbsp Powdered Sugar
1 Tbsp Heavy Cream
1 tsp Cinnamon

Directions:
 Add all ingredients together and mix with a hand mixer until smooth. 

Season the ribs and place in pan.  Add brown sugar and honey on top
Add the vinegar and apple juice
Top with BBQ Sauce
Remove from oven and allow to cool
Add cheese and milk to boiled broccoli
Cook until cheese is melted
Mix all butter ingredients until smooth
Serve & Enjoy!
