Watermelon-Triple-Berry Protein Smoothie with Kale

It was time to share another one of my delicious protein smoothies.  I like to always add Kale into my smoothies when I can so I am all stocked up for a couple weeks right now :)  I also had watermelon to make use of which gave it a very delicious flavor.  Enjoy!


Ingredients:
1-1 1/2 Cup Triple Berry Frozen Fruit Mix (Raspberries, Blueberries & Blackberries)
1 Scoop Vanilla Protein Powder
1/2 apple (cored and sliced)
1/2 pear (cored and sliced)
1-1 1/2 Cup Watermelon (Rind Removed & Sliced)
1 Leaf Kale

1 Cup Rice Milk

Directions:
Add the frozen ingredients into the blender first and then add the protein and the remaining fruit, top with the milk (This helps ensure a better overall blend).  Blend on medium/high speed until well blended and serve.  This gives me 2 smoothies to enjoy so that I can take care of 2 days at once, refrigerate the remaining smoothie.  Enjoy!


Add all of the ingredients to the blender
Blend until fully mixed
Serve & Enjoy!

Pear-Apple-Berry Fruit Protein Smoothie

I make a lot of fruit protein smoothies, and they end up different every time, depending on what my ingredient choices are around the house.  I keep trying to remember to write the recipes down so that I can go back and make them again, or not make ones that didn't end up as well as I would have liked.  Tonight after my workout I was putting one together and decided it would be a good time to share this kind of recipe with the readers of my blog.  Enjoy!  And let me know if you have any comments or suggestions. 

Ingredients:
1 apple (cored and sliced)
1 pear (cored and sliced)
1/4 Cup Mandarin Oranges
1 Cup Frozen Fruit (Strawberries, Blueberries & Mangoes)
1 Scoop Vanilla Protein Powder
1 Cup Rice Milk

Directions:
Add the frozen ingredients into the blender first and then add the protein and the remaining fruit, top with the milk (This helps ensure a better overall blend).  Blend on medium/high speed until well blended and serve.  This gives me 2 smoothies to enjoy so that I can take care of 2 days at once, refrigerate the remaining smoothie.  Enjoy!

Passion for Computers

I have recently applied to go back to college and I sent in my application to UAT (University of Advancing Technology) this week.  In so doing I had to answer some of those joyous admission questions, I thought that I would take the time to share one of the answers with you.  This one is about my passion for computers.  I find that I don't always talk a lot about myself and my background and wanted to go ahead and give you this small glimpse into me if you were interested.  Enjoy!

I initially fell in love with computers when I was in grade school and was given an older MS-DOS machine.  Even without the fancy images that we are so used to seeing today, I knew that computers would always be a love in my life.  I remember playing the MS-DOS version of Dungeons and Dragons and becoming completely absorbed into this new world that was even more amazing for my imagination than a “Choose Your Own Adventure” book.  If I thought that I was hooked with MS-DOS; I was completely enamored by the time that I began my middle school years.  I will never forget the fun with typing games and how quickly I caught on to typing.  I can honestly attribute my typing skills by a desire to play a game that stole my attention: The Oregon Trail (this was a reward for finishing typing ahead of scheduled time).  It was from this moment forward that computer games would become a staple in my life.  By the time that my family was able to have a personal computer in our home I was losing hours of my life to gaming.  I wanted nothing more than to turn the stories in my head into games.  I ensured that any elective classes I could find in high school were quickly turned to any available computer classes.  I withdrew from my music classes to pursue my true love of computers.  I was taking seemingly unrelated classes in order to learn new computer skills such as Accounting and Business Law. 
As I got older and branched out from games such as Myst and the original Sims, I found my gaming passion in Role-Playing-Games (RPGs).  I explored many angles of these games and found myself always wanting more than could be found in the current games.  I did web design and learned some basic design and code writing techniques.  I was always let down by the lack of RPG games geared towards women.  There were many games that I was interested in, but they only allowed for the main character to be played as a man.  Once character customization really took off, I found myself even more enthralled with this world I could become a part of; it was akin to becoming completely immersed into a book, but I had control of the story and now I could even make the character be who and what I wanted them to be.  I found myself gravitating more towards games with more advanced customization options where I felt that I could relate more to the character.  The Sims started this off, but it was RPGs that stole my heart and my attention.  With games like Elder Scrolls, City of Heroes/Villains and Dragon Age as well as various turn by turn games, I found myself devoting as much time as I could to these games.  Yet, I still wanted more out of them.  I wanted more from the female characters.  Rarely do games allow a female to become the ultimate lead, rarely do the games allow a woman to be both beautiful and sexy in armor, as well as appear to be realistically protected by it. 
My love for technology has bled over into my military career as well.  Throughout my military career I have been able to work on Apple, IBM, and Linux based machines.  I have also gained work experience on visualizations, plans writing, and development to add to my love of computers.  I find myself in this age of computers always wanting to DO more and to LEARN more.  I have always felt a strong desire to pursue further education with computers and to delve into the depths of them for years but it wasn’t until now, with the close of my 11-year military career, that I am able to devote the required time to pursue this love.

Apple Glazed Pork Scallopini

Glazes are always a great way to ensure that you end up with a savory, flavorful, juicy pork dish.  Pork is always a great dish to add fruit to because it goes really well with a little bit of a sweet flavor.

Ingredients:
5 Tbsp Butter
3 Pork Scaloppinis
Seasoning ( Mediterranean Sea Salt, Tarragon, Basil)
1 Large Apple (Cored & Sliced)
3 Tbsp Apple Jelly (You can also use jelly as I originally intended to use)
2 Tbsp Sugar

Directions:
Add 2 Tbsp Butter to a skillet.  Add the pork and season generously on both sides.  Cook on med-high until browned thoroughly (About 8-10 minutes per side).  Soften the butter and mix with the jelly & sugar.  Add the glaze and apple slices to the pork.  Turn the heat down to low and mix thoroughly.  Simmer for about 5 minutes to ensure the glaze has soaked into the pork.Serve with the apples and glaze.  Enjoy!

Apple Stuffed Acorn Squash

This afternoon I was looking for inspiration on how to utilize all of the produce (mostly veggies) that I have lying around in my fridge before it goes bad.  As I was looking through recipes, I remembered that I had an acorn squash in there.  Having never before purchased an acorn squash I wasn't quite sure what to do with it and if baking it would work in the same manner as it does with a butternut squash.  I came across a lot of delicious different things that you can bake in the squash and since I knew I had apples I had a golden opportunity!  The recipe was fairly easy and delicious, just took some time to bake completely.  Enjoy! 

Ingredients:
1 Acorn Squash
2 Apples (Cored, Peeled, & Sliced/Chopped)
2 Tbsp Butter
4 Tbsp Honey (you can also use some brown sugar to make it taste a bit sweeter if you would like)
Cinnamon

 Directions:
Preheat oven to 400 degrees.  Cut the acorn squash in half and scoop out all of the seeds (once you no longer see anything stringy, just like with a pumpkin than you are done.)  Score the squash (make long cuts into it for flavor) and place into a loaf pan.  Get he apples ready and fill the middle of both sides of the squash.  Cover the pan with foil and cook for 30 minutes.  Remove from oven.  Combine the butter and honey and microwave to melt the butter.  Drizzle over the apples in the squash.  Sprinkle the cinnamon on top and cook for about 20 min or until the squash is soft with the poke of a fork.  Allow 5 minutes to cool and you can serve as a meal itself or you can scoop the apples and part of squash onto a plate as a side dish.

Scoop out the middle
Score the squash and place int he loaf pan
Add the apples into the middle of the squash
Cover and bake for 30 minutes

Remove from the oven and chop the apples some more if you would like
Mix the melted butter and honey together
Drizzle over the apples in the squash
Sprinkle with cinnamon and return to the oven
Let cool for a few minutes and enjoy the deliciousness!

Glazed Pork Scaloppini & Mashed Red Potatoes

Although originally my glaze was supposed to be straight apples, and accidental mixing up of the Peach and Apple jelly led to a slight hint of peach as well!  It turned out splendidly!  I would definitely make it again! 

Glazed Pork Scaloppini

Ingredients:
5 Tbsp Butter
4 Pork Scaloppinis
Seasoning (Alpine Touch, Basil, Tarragon, Brown Sugar Bourbon, Ground Cinnamon)
3 Apples (Cored & Sliced)
3 Tbsp Peach Jelly (You can also use jelly as I originally intended to use)
2 Tbsp Brown Sugar

Directions:
Add 2 Tbsp Butter to a skillet.  Add the pork and season generously on both sides, using the cinnamon lightly.  Cook on med-high until browned thoroughly (About 8-10 minutes per side).  Remove the pork from the pan and set aside (I like to store in the microwave to keep warm).  Add the remaining 3 Tbsp Butter and the apple slices.  Turn the heat down to low and add the Jelly & Brown Sugar.  Mix thoroughly and allow to turn into a sauce with apples.  Return the pork to the skillet to cover with the glaze.  Serve with the apples and glaze.  Enjoy!


Mashed Red Potatoes

Ingredients:
3 Large Red Potatoes (Cubed)
3/4 Cup Milk
Seasoning (Basil, Garlic Powder & Alpine Touch)
1/2 Cup Shredded Cheese
2 Tbsp Sour Cream
Leeks to garnish

Directions:
Add the potatoes to a pot and just barely cover with water.  Boil on high heat until the water is almost completely gone and the potatoes are soft and easily mashable.  Turn heat down to low.  Add the milk and seasoning and whisk out the lumps.   Add the Cheese & Sour Cream and mix thoroughly until cheese is melted.  Top with chopped Leeks to garnish.  Serve & Enjoy!

Add the Butter, Pork & Seasoning to a skillet while the potatoes boil

Remove the pork and add remaining butter and apple sliced to the skillet while the potatoes finish boiling
Allow apples to soften, add the milk and seasoning to the potatoes and whisk out lumps
Add the sugar and Jelly tot he skillet
Add the cheese and sour cream to the potatoes
Top Pork with apples & Glaze, Top potatoes with chopped leeks, serve & enjoy!

Apple Maple BBQ Spare Ribs

Deliciously tender and sweet :)  

Ingredients:
1 half rack of pork spare ribs
Seasoning (Alpine Touch, Brown Sugar Bourbon, Barbecue, Sweet & Smoky Rub)
2 Apples (cored and sliced, I used Gala apples)
2 Cups Apple Juice
1 Cup Water
Apple Maple Barbecue Sauce

  Directions:
Preheat oven to 325 degrees.  place the ribs in a heavy bottom pan.  Add the ribs, cut if needed to make fit.  Season on both sides.  Make sure bones are facing the bottom of the pan.  Add the apples on top.  Add the apple juice and water.  Drizzle BBQ sauce on top of the ribs and cook for about an hour or until thoroughly done.  Serve and enjoy!

Pear Apple Glazed Pork Tederloins

Delicious and a good way to eat some fruit :)

Ingredients:
1 Tbsp Oil
3 Pork Tenderloins
Seasoning (Mediterranean Sea  Salt, Mediterranean Basil, Tarragon, dash of Cinnamon)
1 Pear (Cored and sliced)
2 Small Apples (cored and sliced)
3 Tbsp Butter (melted)
3 Tbsp Apple Butter Syrup
1 Tbsp Sugar
1 Tbsp Honey

Directions:
Pour the oil into the skillet and add the pork and add the seasoning.  Cook on medium for about 15-20 minutes until cooked all the way through.  Turn the heat down to low and add the pears and apple slices.  Simmer until softened. 
To make the glaze combine all remaining ingredients and mix thoroughly.  Spoon over the pork, turn and spoon over the other side, simmer for a couple of minutes until warmed.  Serve by spooning glaze and fruit over the pork.  Enjoy!

Steak Gouda Salad

Just a delicious concoction made from ingredients I had in my fridge and steak I needed to cook.

Ingredients:
1 Tbsp Olive Oil
1 lb stewing steak
Seasoning (Brown Sugar Bourbon, Sweet & Smokey Rub, Garlic Powder, Alpine Touch)
3-4 Large Leaves of Lettuce
1 Apple (Cored and Sliced)
1/2 Cucumber (Peeled & Chopped)
1/2 Tomato (Chopped)
Dressing (I used Avocado Ranch)
Shredded Gouda Cheese

Directions:
Add the oil to the skillet and turn to med-high.  Add the steak and seasoning and cook for about 8-10 minutes, cooked about to medium or more if you prefer.  
Shred the lettuce and add to the plate.  Place the apple, cucumber and tomato slices on top of the lettuce.  Drizzle the dressing and add the steak over it.  Top by sprinkling Gouda cheese on top.  Serve immediately and enjoy!

Burgundy Pork & Apple Raspberry Crumble: WHAT YOU DECIDED

I just want to take this time to thank the valuable support of everyone who took the time to vote for their favorite recipe choice between the comments on my blog and on facebook.  You helped turn this into something fun and I honestly had no idea which dessert I was going to be making.

The burgundy Pork really won by a landslide!  Not to talk myself up or anything, but it definitely did turn out very tasty.  The apple raspberry crumble took a small lead in the beginning and held it the whole way through.  Although personally I would have rated it as my least favorite of the choices, I am really glad that it was chosen because it turned out even better than the pork and I will definitely make it again!  Without further ado, here are your recipes and the accompanying photos!  Thank you thank you again so very much!  We should definitely do this again next month!


 Burgundy Pork

Ingredients:
2-2.5 lbs Pork Tenderloin (mine was 2.6)
Seasoning (Hickory Balsalmic Rub, Crushed Rosemary, Sea Salt, Garlic Salt)
2 Celery Stalks Sliced
2 1/2 Cups Red Wine
1 pkg Au Jus (or whichever brown gravy you prefer)

Directions:
Preheat the oven to 350 degrees.  Place pork in a 9 X 13 baking dish and sprinkle with the seasoning.  Add the celery and pour the wine into the dish.  Bake for 45 minutes.  Remove the meat from the dish and put the dish onto the stove over a burner.  Add the Au Jus and simmer for about 5-10 minutes to thicken.  Serve by slicing the meat and covering with the sauce.

Cook for 45 minutes
Add the Au Jus to the sauce
Serve & enjoy :)


Apple Raspberry Crumble

Ingredients:
Topping:
7 Tbsp Unsalted Butter
1/2 Cup Rolled Oats
3/4 Cup All Purpose Flour
1/2 Cup Packed Brown Sugar
1/2 Cup Walnuts, Chopped
1/4 Cup Almonds, Sliced

Filling:
2-2.5 lbs baking apples (I used Gala)
2 Cups Raspberries
5 Tbsp granulated Sugar
2 Tbsp Flour
2 Tbsp Lemon Juice
1 tsp Cinnamon
2 tsp Almond Extract
2 Tbsp Unsalted Butter


Directions: 
Preheat the oven to 375 degrees.  Butter a 2 Quart shallow baking dish.
Topping:
Whisk the oats, flour and sugar together.  Stir in the nuts. Thinly slice the butter into the bowl and work it into the mixture with your fingers until evenly mixed.  Set aside.
Filling:
Peel and core the apples.  Cut apples into 3/4 inch chunks.  Gently toss with the raspberries.  Toss in the remaining ingredients except for the butter.  Transfer the filling to the baking dish.  Slice the butter over top of the filling. 
Scatter handfuls of topping on top of the filling until evenly distributed.  Bake 40 minutes or until bubbly and brown. 
Let sit at least 10 minutes, serve with ice cream or whipped topping.  Enjoy!

Whisk Oats, Flour, &  Sugar
Mix the nuts into the topping
Work the butter in with your fingers until evenly mixed
Peel the apples
Slice into 3/4 in. chunks
Gently toss with raspberries
Mix in the remaining ingredients
Pour into the baking dish
Slice the butter over top of the filling
Sprinkle the topping evenly on top of the filling
