Hawaiian Chicken over Jasmine Rice

I was inspired by a similar recipe that I had made a couple of months ago, and Liam had really enjoyed it.  When we received two pineapple this week, I instantly thought of this recipe!  Enjoy!

Ingredients:
1 Tbsp Olive Oil
3 boneless skinless chicken breasts
Seasoning (Barbecue, Mango Lime, Garlic Powder)
BBQ Sauce
2-3 Pineapple Rounds (Sliced)
1 Cup Jasmine Rice

Directions:
Add the oil to the pan and turn the heat to medium.  Add the chicken and season it generously.  Cook until browned on both sides and turn heat to low.  Cook the rice in a rice or steam cooker.  If you do not have one, you can also cook on the stove-top.  Pour the BBQ sauce over top and allow to warm and soak in.  Add the pineapples on top and cook for another minute or two.  Serve over a bed of rice & enjoy!

Add the pineapples and turn off the heat, allowing to sit for 1-2 minutes
Serve over a bed of rice and enjoy!

Sloppy Joes


I hadn't made any sloppy joes in about 4 months, so I figured it was about time to do some tweaking to the delicious recipe.  Here it is!

 Ingredients:
1 lb ground hamburger
Alpine Touch
2 Tbsp Butter
3 Carrots (Peeled & Minced)
3 Garlic cloves (minced)
2 Celery Stalks (Minced)
1 Tbsp Vinegar
1/2 Tbsp Crushed Red Pepper
1/2 Tbsp Thyme
1 Tbsp Brown Sugar Bourbon Grill Mate (or another great steak seasoning) 
1/2 Tbsp Parsley
3 Tbsp Brown Sugar
3 Tbsp Tomato Paste
1/2 Cup Ketchup
1/2 Cup BBQ sauce (Hickory Mesquite Smoke for a delicious smokey flavor)

Directions:
Brown the hamburger.  Drain and set aside.
In a separate pan add the Butter, minced carrots and garlic and saute' for 2-3 minutes.  Add the minced celery and cook for another minute.  Add the Vinegar and seasoning and cook for another minute or two to thoroughly season the veggies.  Add all remaining ingredients and thoroughly mix.  Add the hamburger to the mixture and simmer for about 15 minutes.  Sauce will be ready to serve.  Serve on your favorite bun, roll or bread for the best eating experience. 

Season and brown the hamburger
Add the butter, minced garlic and minced carrots to a heavy bottom skillet
Add in the minced celery and cook on medium heat
Add the spices
Add the remaining ingredients

Mix thoroughly
Add in the hamburger and stir to warm
Serve & Enjoy

Hawaiian BBQ Chicken

I try to do my best to ensure that the least amount of food is wasted in my house so when I noticed that I had a couple of slices of pineapple left, I immediately wanted to make something delicious with it!  Here is the result and it turned out fabulously!  Very quick and easy and delicious!

Ingredients:
1 Tbsp Olive Oil

Hickory-Mesquite Mango Pepper Ribs

I wanted ribs but I also wanted to use up a mango I had around the house, so I came up with this delicious concoction.  Enjoy :)

Ribs
Ingredients:
1/2 package ( 6-8 pork ribs bone-in)
Seasoning (Roaster Garlic, Barbecue, Hickory Smoked Balsamic, Crushed Red Pepper)
1 1/2 Cup Apple Juice
1/3 Cup Hickory Flavored BBQ Sauce
1/3 Cup Mesquite Flavored BBQ Sauce
1 Large Mango (Peeled, Cored & Chopped)
1 Orange Pepper (Seeded & Chopped)

Directions:
Preheat oven to 350.   Pour the apple juice into a deep narrow pan (I used a meatloaf pan.)  Generously season the ribs and put them into the pan.  Add the mangos and then the peppers on top of the ribs.  Drizzle the BBQ sauce over the top.  Cook for an hour, turn off the oven and let sit for another 15 minutes.  Remove and serve.  Enjoy!

Cinnamon Honey Butter
Ingredients:
3/4 Cup Butter (1 1/2 Sticks, softened)
5 Tbsp Honey
5 Tbsp Powdered Sugar
5 Tbsp Heavy Cream
1-2 Tbsp Cinnamon

Directions:
 Add all ingredients together and mix with a hand mixer until smooth.


Add the apple juice to the pan
Add the ribs

Generously season the ribs
Add the mangos on top
Now add the peppers
Drizzle the BBQ sauces on top and stick in the oven

Add the butter ingredients to a mixing bowl
Mix thoroughly
Remove ribs from the oven and allow to cool for a few minutes

Serve & Enjoy!

Pear Mesquite Ribs

This is one of those using things you have around the house kind of recipes, and it turned out delicious!  It's one of the reasons that I always love ribs, is because you can do so many things with the flavor of them.  Enjoy this version!

Ingredients:
1 Package Pork Butt Ribs (4 large ribs)
Seasoning (Brown Sugar Bourbon, Tarragon, Barbecue)
1-1 1/2 Cup Apple Juice
3/4 Bottle of Mesquite Flavored BBQ Sauce
1 Large Pear (Cored & Sliced)

Directions:
Preheat oven to 350.  Generously season the ribs and put them into a deep pan.  Pour in enough apple juice to just reach the top of the ribs.  Drizzle the BBQ sauce over the top.  Add the pears and then top with additional Brown Sugar Bourbon seasoning over the pears.  Cook for an hour, turn off the oven and let sit for another 15 minutes.  Remove and serve.  Enjoy!

Generously season the ribs
Add the Apple Juice to the top of the ribs
Drizzle The BBQ sauce on top of the ribs
Add the pears on top and season once more

Remove from the oven
Serve & Enjoy!

Apple Maple BBQ Spare Ribs

Deliciously tender and sweet :)  

Ingredients:
1 half rack of pork spare ribs
Seasoning (Alpine Touch, Brown Sugar Bourbon, Barbecue, Sweet & Smoky Rub)
2 Apples (cored and sliced, I used Gala apples)
2 Cups Apple Juice
1 Cup Water
Apple Maple Barbecue Sauce

  Directions:
Preheat oven to 325 degrees.  place the ribs in a heavy bottom pan.  Add the ribs, cut if needed to make fit.  Season on both sides.  Make sure bones are facing the bottom of the pan.  Add the apples on top.  Add the apple juice and water.  Drizzle BBQ sauce on top of the ribs and cook for about an hour or until thoroughly done.  Serve and enjoy!

Cheese Stuffed BBQ Guacamole Burgers

Simple and delicious, a great twist to an old classic, enjoy!



Ingredients:
1 lb Hamburger
Cheese Cubed (I made 6 burgers so I had 6 cubes each of smoked butterkase and mild cheddar)
Seasoning (BBQ & Alpine Touch)
Guacamole (store bought or home made)
BBQ Sauce
1-2 Pickles (Sliced)
Hamburger Buns (I had forgotten mine so you wont see any pictured here

Directions:
Make 6 balls and flatten them out.  Season both sides.  Add 1 cube of each kind of cheese to each burger.  Rewrap around the cheese to ensure that none is showing.  Cook 3 at a time in a drying pan and flatten with the spatula.  Serve by add a generous amount of guacamole, placing the pickles on top and adding BBQ sauce, enjoy!


Make 6 balls and flatten
Add your seasoning
Place the cubes of cheese on the burgers
Rewrap the burger around the cheese

Sloppy Joes!

These were so amazing last time that I had to make them again, although I changed a few things up :)  Amazing as ever!

 Ingredients:

2 Tbsp Butter

4 Mushrooms (minced)
2 Celery Stalks (Minced)
1 Tbsp Vinegar
1/2 Tbsp Crushed Red Pepper
1/2 Tbsp Thyme
1 Tbsp Brown Sugar Bourbon Grill Mate (or another great steak seasoning) 
1 tsp Fresh Basil (chopped)
1 tsp Fresh Oregano (chopped)
3 Tbsp Brown Sugar
3 Tbsp Tomato Paste
1/2 Cup Ketchup
1/2 Cup BBQ sauce (Carolina Honey for a sweeter version)
Directions:
Brown the hamburger.  Drain and set aside.
In a separate pan add the Butter, minced carrots and garlic and saute' for 2-3 minutes.  Add the minced celery and cook for another minute.  Add the Vinegar and seasoning and cook for another minute or two to thoroughly season the veggies.  Add all remaining ingredients and thoroughly mix.  Add the hamburger to the mixture and simmer for about 15 minutes.  Sauce will be ready to serve.  Serve on your favorite bun, roll or bread for the best eating experience.

Add the celery and continue sauteing
Add the vinegar and seasoning

Add the hamburger to the sauce
Mix thoroughly
