Orange Brandy Pork

Anyone that knows me, knows that I love pork.  So what is better than to mix some delicious brandy into your pork?  Enjoy this succulent and easy recipe!

Ingredients:
2 Tbsp Butter (Unsalted)
3 Pork Loins
Seasoning (Mediterranean Spiced Sea Salt, Basil, Thyme)
1 Carrot (Outside peeled off and then peel the rest of the carrot down to the core)
2/3 Cup Orange Juice
1/3 Cup Grand Marnier

Directions:
Add the butter into a heavy bottom skillet. Season the pork generously and add to the butter.  Cook until barely pink in the center (about 4 minutes per side).   Transfer the pork to a plate and cover. 
Add the carrot to the skillet and saute over medium heat until softened (about 4 minutes).  Add the orange juice and liquor and scrape up and remaining bits on the bottom of the pan and cook for 1 minute.
Return the pork and any remaining juices to the skillet until heated all the way through.  Serve the pork with carrot on top and sauce spooned over.  Enjoy.

Add the remaining ingredients
Bring the pork back to the sauce
Serve & Enjoy!

Red Pepper Peach Protein Smoothie

Another weird one, I know, but trust me, it's delicious.  And of course very healthy.  I really enjoyed this one. 


Ingredients:
1 Cup Frozen strawberries & Blueberries
1 Scoop Vanilla Protein Powder
2 medium sized Carrots (Peeled & Chopped)
1/2 Red Pepper (Seeded & Chopped)
1/2 Cucumber (Peeled & Sliced)
1 Green Apple (Cored & Sliced)
2 Peach (Pitted & Sliced)
Juice of 1 Lime
1 Cup Apple Juice (Not From Concentrate)

Directions:
Add the frozen ingredients into the blender first and then add the protein and the remaining ingredients, top with the apple juice (This helps ensure a better overall blend).  Blend on medium/high speed until well blended and serve.  This gives you 2 smoothies to enjoy so that you can take care of 2 days at once, refrigerate the remaining smoothie.  Enjoy!


Add all of the ingredients
Blend
Serve & Enjoy!

Sloppy Joes


I hadn't made any sloppy joes in about 4 months, so I figured it was about time to do some tweaking to the delicious recipe.  Here it is!

 Ingredients:
1 lb ground hamburger
Alpine Touch
2 Tbsp Butter
3 Carrots (Peeled & Minced)
3 Garlic cloves (minced)
2 Celery Stalks (Minced)
1 Tbsp Vinegar
1/2 Tbsp Crushed Red Pepper
1/2 Tbsp Thyme
1 Tbsp Brown Sugar Bourbon Grill Mate (or another great steak seasoning) 
1/2 Tbsp Parsley
3 Tbsp Brown Sugar
3 Tbsp Tomato Paste
1/2 Cup Ketchup
1/2 Cup BBQ sauce (Hickory Mesquite Smoke for a delicious smokey flavor)

Directions:
Brown the hamburger.  Drain and set aside.
In a separate pan add the Butter, minced carrots and garlic and saute' for 2-3 minutes.  Add the minced celery and cook for another minute.  Add the Vinegar and seasoning and cook for another minute or two to thoroughly season the veggies.  Add all remaining ingredients and thoroughly mix.  Add the hamburger to the mixture and simmer for about 15 minutes.  Sauce will be ready to serve.  Serve on your favorite bun, roll or bread for the best eating experience. 

Season and brown the hamburger
Add the butter, minced garlic and minced carrots to a heavy bottom skillet
Add in the minced celery and cook on medium heat
Add the spices
Add the remaining ingredients

Mix thoroughly
Add in the hamburger and stir to warm
Serve & Enjoy

Cantaloupe-Carrot-Berrry Protein Smoothie

A nice Summery melon taste in this smoothie, also with all the benefits of carrots and kale to keep it from tasting too sweet.  You can definitely taste the flavors in this one and they make for a delicious combination.


Ingredients:
1 Cup Frozen Strawberries
1 Scoop Vanilla Protein Powder
2 Cups Cantaloupe (Rhined & Chopped)
1 Leaf Kale (Ripped into pieces)
3 Large Carrots (Peeled & Chopped)
1/4 Cup Blueberries
1 Cup Milk


Directions:
Add the frozen ingredients into the blender first and then add the protein and the remaining fruit, top with the milk (This helps ensure a better overall blend).  Blend on medium/high speed until well blended and serve.  This gives you 2 smoothies to enjoy so that you can take care of 2 days at once, refrigerate the remaining smoothie.  Enjoy!

Heirloom Carrot-Watermelon Protein Smoothie

This was a smoothie that featured and excellent mix of both fruits and veggies!  It was very light tasting and the watermelon taste came through.  It was not as sweet as my previous fruitier smoothies but was very delicious.  I would definitely make it again. 

Ingredients:
1 Cup Frozen Fruit (Mango, Strawberries, Blueberries)
1 Scoop Vanilla Protein
1 Heirloom Carrot (Peeled & chopped)
1 Cup Watermelon (chopped)
2 Radishes (Ends removed and chopped)
1 Cutie Orange (Peeled & Sectioned)
1 Leaf Kale
1/2 Pear (Seeded & Chopped)
1 Cup Milk


Directions:

Avocado Mac & Cheese

I came across this delicious recipe awhile back and have been wanting to try it but was a little fearful of how it would turn out.  With as weird as it sounds, it definitely was VERY delicious!  Of course I wouldn't recommend it if you aren't a big fan of Avocados or cheese ;)  I also made up some quick and easy grilled vegetable spears that were a nice compliment to the flavor.


Ingredients:

13 ounces dry medium shell pasta
2 cloves garlic, minced
2 avocados, peeled and pitted
2 tablespoons fresh lime juice
1/3 cup chopped fresh cilantro
Alpine Touch, to taste
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
2 cups shredded Monterey Jack cheese
1/2 Cup Smoked Gouda Cheese (cubed)
Salt and pepper, to taste
Fresh avocado chunks, for garnish, if desired

Grilled Veggies:
1 Zucchini (Peeled & cut into spears)
3 Large Carrots (Peeled & cut into spears)
Olive Oil
Alpine Touch

Directions:
1. Bring water to a boil in a large pot. Salt the water and add in the pasta. Stir and cook until Al Dente, about 8-10 minutes. Drain and set aside.
2. While the pasta is cooking, make the avocado sauce by placing the garlic, avocados, lime juice, cilantro, salt and pepper into a blender. Blend until smooth and creamy. Set aside.
3. To make the cheese sauce, place butter in a small saucepan and heat over medium heat. When butter is melted, whisk in flour to create a paste. Whisk in milk until smooth. Stir until the sauce starts to thicken. Add in both cheeses and stir until cheese is melted and sauce is creamy.
4. Place macaroni in a large bowl. Pour the avocado sauce over the macaroni and stir until well coated. Add the cheese sauce and stir until macaroni is coated and creamy. Serve warm. Garnish with fresh avocado chunks, if desired.
*Note-the lime juice keeps the avocado from browning. The mac and cheese is best eaten the first day, but it is still good the second day. The pasta may turn slightly brown, but not bad.

Grilled Veggies:
Preheat oven to 425.  Lay tinfoil out on a cookie sheet.  Place the speared vegetables onto the tinfoil and coat with olive oil and season with Alpine Touch.  Cook for about 15 minutes, allow a couple of minutes to cool and serve. 

Cook pasta until Al Dente
Blend avocado sauce until creamy
Melt butter in a pan
Mix in the flour
Mix in the milk

Lay the vegetable spears out on the tin foil and cover with oil and seasoning
Place pasta in a large bowl and coat with the avocado sauce
Coat with the cheese sauce until mixed thoroughly
Remove grilled veggies from the oven and allow to cool for a couple of minutes
Serve pasta with additional avocado slices and cilantro and enjoy!
