I have an affinity for anything avocado, so naturally I am a huge Guacamole fan. With that being said, I am not a big fan of onions, and I'm always striving to come up with the best onion free guacamole recipe. Last night I concocted something amazing. So amazing in fact, that it just had to be shared. Enjoy!
Ingredients:
3 Avocados (seeded and peeled)
Juice of 2 Limes (only use 1 if you don't love the hint of lime taste)
1/2 Red Bell Pepper (seeded and chopped)
8 Champagne Tomatoes (chopped, can substitute grape tomatoes)
1/2 Jalapeno (Seeded and Minced)
1 Clove Garlic (Minced)
1 tsp Himalayan Sea Salt
1-2 tsp Cumin Powder
Directions:
Add all ingredients to a bowl and mix thoroughly. Enjoy!

Hibiscus Lime Drumsticks
I was so excited to receive dried Hibiscus with my last Bountiful Basket order, but I have been having a hard time trying to use it. This was an excellent way to use Hibiscus and added a light and delicious flavor mix with the lime.
Ingredients:
3 Tbsp Olive Oil
Juice of 4 Limes
1-2 Handfuls of Dried Hibiscus
4-5 Leaves of Fresh Basil (Can be substituted to 1 Tbsp of dried Basil)
Seasoning (Tarragon, Mediterranean Spiced Sea Salt)
5-6 Chicken Drumsticks
Directions:
Preheat oven to 350 degrees. Mix the Oil, Lime Juice, Hibiscus, Basil. and seasoning together in a bowl. Roll the drumsticks one at a time into the mixture and place into a deep pan (I covered with tinfoil to make cleaning easy). Once complete, pour the remaining mixture over top of the drumsticks in the pan and the sprinkle with additional seasoning. Cook for 40-50 minutes or until done all the way through. Serve & Enjoy!

Watermelon-Mango Fruit Protein Smoothie
This one was just amazingly delicious. I filled it so full, I even got 3 servings out of it.
Ingredients:
1 Cup Frozen strawberries & Blueberries
1 1/2 Scoops Vanilla Protein Powder/Shakeology
1/2 Watermelon (Personal Sized, Chopped)
1 Mango (Peeled and Sliced)
1 Apple (Cored & Sliced)
1 Lime (Peeled & sectioned)
20 Blueberries
20 Red Grapes
1 Cup Orange Juice (Not From Concentrate)
Directions:
Add the frozen ingredients into the blender first and then add the protein and the remaining ingredients, top with the orange juice (This helps ensure a better overall blend). Blend on medium/high speed until well blended and serve. This gives you 2 smoothies to enjoy so that you can take care of 2 days at once, refrigerate the remaining smoothie. Enjoy!

Red Pepper Peach Protein Smoothie
Another weird one, I know, but trust me, it's delicious. And of course very healthy. I really enjoyed this one.

Basil Orange Lime Chicken Drumsticks
I received so many limes with my bountiful basket yesterday that I had to do something with a few of them. Orange Lime Chicken sounded delicious, and here you go:
Ingredients:
3 Tbsp Olive Oil
1 Tbsp Orange Emulsion
2 Limes (Juiced)
Seasoning (Alpine Touch, Basil, Oregano)
5-6 Chicken Drumsticks
Directions:
Preheat oven to 350 degrees. Mix the Oil, Orange, Lime Juice and seasoning together in a bowl. Roll the drumsticks one at a time into the mixture and place into a deep pan (I covered with tinfoil to make cleaning easy). Once complete, pour the remaining mixture over top of the drumsticks in the pan and the sprinkle with additional seasoning. Cook for 40-50 minutes or until done all the way through. Serve & Enjoy!

Citrus Chicken Recipe
A delicious and easy citrus twist to chicken.
Ingredients:
6-7 Chicken Tenderloins
1 Tbsp Oil
Seasoning (Alpine Touch, Mango Lime Seasoning, Sweet & Smokey Rub)
2 Cuties, Small Oranges (Peel and Section)
1 Mango (Peel & Slice)
1 Tbsp Lime Juice
Directions:
Add the oil and Chicken to the pan and cook on med-high. Season generously. When thoroughly cooked add oranges, mango and lime juice. Turn heat down to Simmer and Simmer for about 5 minutes until fruit is softened. Serve with fruit and enjoy!

Sweet & Smoky Oven-Roasted Trout Recipe
This recipe is very quick and easy and some of the best fish I have ever had. The skin just peels right off after baking.
Ingredients:
1 Trout Fillet
Sweet & Smoky Rub
Lime Pepper
Vegetable Oil
Directions:
Preheat the oven to 500 degrees. Oil a large baking sheet with vegetable oil. Sprinkle the cut side of the trout with the rub & lime pepper. Place the trout skin side down on the baking sheet. Bake for 10-12 minutes. Remove from oven. Remove skin and serve. ENJOY!

Rosemary Citrus Chicken
Rosemary Citrus Marinated Grilled Chicken
Ingredients:
2 tsp Orange Zest
1/2 tsp Lemon Zest
1/4 Cup Fresh Orange Juice
2 Tbsp Lime Juice
2 Cloves Garlic Chopped
1 Tbsp Crushed Rosemary
3 Chicken Breasts Skinless
Directions:
In a large bowl (or resealable plastic bag) combine the orange and lemon zest. Add the orange and lime juice to the zest. Mix together and add the garlic and rosemary. Thoroughly mix the ingredients and add the chicken breasts. Cover completely and marinate for about 20 minutes. Remove the chicken and grill for about 15 minutes or until thoroughly cooked while still being juicy. Serve and enjoy!
