Sangria Mix

My mother had sent me a Sangria pre-mix that she had come across since she knew of my love fro Sangria.  So I decided to give it a shot, and I have to admit that it did turn out very delicious.  Almost dangerous as it went down like juice. 

Ingredients: (makes about 7 or 8 large glasses)
1 packet Sangria Mix (I used one from Gourmet Village)
2 Cups Portmanteau (I used 2010 from Christoval Vineyards)
2 Cups Estate Vermentino (I used 2012  from the local Christoval Vineyards)
1 Cup Brandy (I used E&J)
1/2 Cup Amaretto Liquor (I used Disaronno)
2 Cups Orange Juice (not from concentrate is best I used Simply Orange)
4  Pineapple Rounds (Cored & Sliced)
6 Strawberries (Sliced)
1 Apple (Cored & Sliced)
10 Slices of Honey Dewlicious
10-15 Green Grapes (Seedless)

Directions:
Add all ingredients except fruit to a pitcher.  Stir thoroughly.  Add in the fruit and stir again.  Allow fruit to sit in sangria for at least 10 minutes before serving.  Serve & Enjoy!  (Feel free to eat the fruit and add to your glass)

Wine-Infused Leg of Lamb

This is an extremely easy AND extremely delicious recipe!  I am a big lover of lamb, but you could also do this with a nice beef roast. 

Ingredients:
1.5 lb Leg of Lamb (Larger if you are wanting to serve more people)
Seasoning (Garlic, Rosemary, Sea Salt)
Red Wine (I used Sangiovese)

Directions:
Preheat oven to 350 degrees.  Season the lamb and add it into an oven safe baking dish.  Pour enough wine in to come to the top of the lamb but not cover.  Put in the over for 30-40 minutes for medium rare.  Serve & Enjoy!
*If you want an alcohol free dish, substitute chicken stock.

Remove from oven, serve & enjoy

Chicken Tarragon with Sauteed Veggies

A delicious way to use up some of a leftover bottle of white wine and make your chicken taste amazing!  This evening I wanted to cook up a bunch of the leftover veggies that I need to use before they go bad, so I decided to saute' them in a garlic, basil butter sauce. 

Chicken Tarragon with Rice

Ingredients:
4 Chicken breasts
Seasoning (Mediterranean Sea Salt, Tarragon, Basil)
3/4 Cup Viognier
1 1/4 Cup Chicken Stock
1 Garlic Clove (Minced)
1 Tbsp dried Tarragon
3/4 Cup Heavy Cream

Directions:
Season the chicken and place in a heavy bottom skillet.  Pour in the wine and the chicken stock.  Add the garlic and 1 Tbsp of the Tarragon.  Bring to a boil and reduce the heat, cook for 10 minutes or until the chicken is tender and cooked thoroughly.   
Remove the chicken and store in the microwave on a plate to keep warm.  Bring the remaining sauce to a boil and cook for 12-15 minutes or until reduced by about two-thirds.
Stir in the cream and return to a boil.  Cook until reduced by half.  Stir in the remaining tarragon.  I suggest serving over rice and spooning the sauce over the top.  I like to return the chicken tot he sauce to help lock moisture in before serving.  Enjoy!

 

Garlic, Basil Butter Veggies

Ingredients:
3 Tbsp Butter
2 Garlic Cloves (Minced)
2 Carrots (Peeled & Chopped)
1 Zucchini (Peeled & Chopped)
2 Leek leaves (Chopped)
4-5 Radishes(Chopped)
1/2 Cup Mushrooms (Chopped)
3 Leaved Fresh Basil (Minced)

Directions:
Melt the butter and add the garlic until crispy.  Add the remaining ingredients and  saute' for about 5-10 minutes until softened.  Serve & Enjoy!

Cinnamon Honey Butter

Ingredients:
8 Tbsp Butter (1 Stick softened)
2 Tbsp Honey
1 1/2 Tbsp Powdered Sugar
1 Tbsp Heavy Cream
1 tsp Cinnamon

Directions:
Add all ingredients together and mix with a hand mixer until smooth.


Season the chicken and add to the skillet
Add the wine & chicken stock
Add the garlic & Tarragon
Remove the chicken and boil the remaining liquid
Add the veggies to the garlic butter sauce
Add the cream to the tarragon sauce
Continue to saute' and thicken the sauce
Return the chicken to the sauce
Add all of the butter ingredients to the bowl

Many people recognize it from the 1988 film Big, and the store still features a giant floor piano, like the one that plays a prominent role in the film. Today's piano, which is actually bigger than the one in Big, can be purchased for a whopping $250,000, due to its size and technical sophistication.

For the wine enthusiasts it would be great to have something worth of the occasion or to at least add to the wine cellar.   1982 is a great vintage.  Sotheby's Fine Wine Auction, which just took place in London was auctioning off some bottles of Chateau Lafite and Chateau Petrus.  If you want something even more rare you can go for the La Tache 1990, Domaine de la Romanee estimated at a price of £32,000-£46,000.

Then we come to an amazing Tiffany's necklace, namely the Tiffany's Majestic Necklace.  Tiffany is, of course, chock-full with a number of dearly priced items. The most impressive is the Tiffany Majestic necklace, which costs $12 million (yes, million). This piece comprises over 300 stones and features a 30.31-carat diamond. Beef Roast & Veggies Recipe

As the weather turned cooler this weekend, I wanted to make something to warm us up and happened to have a beef roast on hand that was ready to be cooked.  

Ingredients:
2 lb Beef Roast
2 Cups Red Wine (can substitute beef broth)
3 Cups Water
Seasoning (Garlic, Rosemary, Sea Salt, Bourbon Brown Sugar)
2 Cloves Garlic
4 Stalks Celery (Chopped)
3 Potatoes (Peeled & Chopped)
3 Carrots (Peeled & Chopped)

 Directions:
Season the beef roast and place into the slow cooker.  Add the wine and water and cook on high for 1 hour.  Add the Garlic, Celery, Potatoes and Carrots.  Cook on Low for another hour.  Roast will be tender and ready to eat.  Serve and enjoy!

Burgundy Pork & Apple Raspberry Crumble: WHAT YOU DECIDED

I just want to take this time to thank the valuable support of everyone who took the time to vote for their favorite recipe choice between the comments on my blog and on facebook.  You helped turn this into something fun and I honestly had no idea which dessert I was going to be making.

The burgundy Pork really won by a landslide!  Not to talk myself up or anything, but it definitely did turn out very tasty.  The apple raspberry crumble took a small lead in the beginning and held it the whole way through.  Although personally I would have rated it as my least favorite of the choices, I am really glad that it was chosen because it turned out even better than the pork and I will definitely make it again!  Without further ado, here are your recipes and the accompanying photos!  Thank you thank you again so very much!  We should definitely do this again next month!


 Burgundy Pork

Ingredients:
2-2.5 lbs Pork Tenderloin (mine was 2.6)
Seasoning (Hickory Balsalmic Rub, Crushed Rosemary, Sea Salt, Garlic Salt)
2 Celery Stalks Sliced
2 1/2 Cups Red Wine
1 pkg Au Jus (or whichever brown gravy you prefer)

Directions:
Preheat the oven to 350 degrees.  Place pork in a 9 X 13 baking dish and sprinkle with the seasoning.  Add the celery and pour the wine into the dish.  Bake for 45 minutes.  Remove the meat from the dish and put the dish onto the stove over a burner.  Add the Au Jus and simmer for about 5-10 minutes to thicken.  Serve by slicing the meat and covering with the sauce.

Cook for 45 minutes
Add the Au Jus to the sauce
Serve & enjoy :)


Apple Raspberry Crumble

Ingredients:
Topping:
7 Tbsp Unsalted Butter
1/2 Cup Rolled Oats
3/4 Cup All Purpose Flour
1/2 Cup Packed Brown Sugar
1/2 Cup Walnuts, Chopped
1/4 Cup Almonds, Sliced

Filling:
2-2.5 lbs baking apples (I used Gala)
2 Cups Raspberries
5 Tbsp granulated Sugar
2 Tbsp Flour
2 Tbsp Lemon Juice
1 tsp Cinnamon
2 tsp Almond Extract
2 Tbsp Unsalted Butter


Directions: 
Preheat the oven to 375 degrees.  Butter a 2 Quart shallow baking dish.
Topping:
Whisk the oats, flour and sugar together.  Stir in the nuts. Thinly slice the butter into the bowl and work it into the mixture with your fingers until evenly mixed.  Set aside.
Filling:
Peel and core the apples.  Cut apples into 3/4 inch chunks.  Gently toss with the raspberries.  Toss in the remaining ingredients except for the butter.  Transfer the filling to the baking dish.  Slice the butter over top of the filling. 
Scatter handfuls of topping on top of the filling until evenly distributed.  Bake 40 minutes or until bubbly and brown. 
Let sit at least 10 minutes, serve with ice cream or whipped topping.  Enjoy!

Butter the baking dish
Whisk Oats, Flour, &  Sugar
Mix the nuts into the topping
Work the butter in with your fingers until evenly mixed
Peel the apples
Slice into 3/4 in. chunks
Gently toss with raspberries
Mix in the remaining ingredients
Pour into the baking dish
Slice the butter over top of the filling
Sprinkle the topping evenly on top of the filling
