Ultimate Garden Salad

When you get as many veggies as I end up with, you start to wonder what in the heck you can do with all of them...  Yesterday I came up with an ultimate garden salad.  You could make this using whatever crazy veggies you have around the house, but this is what I had at my disposal.  Enjoy!

Ingredients:
Hand Full Radicchio
3 Stalks Kale
2 Radishes (Chopped)
1 Stalk Celery (Chopped)
1/2 Zucchini (Peeled & Sliced)
1/2 Cucumber (Peeled & Sliced)
2 Large Mushrooms (Chopped)
4 leaves Endives (Chopped)
4 or 5 Cherry Tomatoes (Chopped)
1 Avocado (Pitted & Sliced)
3 Heirloom Carrots (Peeled & then Shaved)
Dressing (I used Guacamole Ranch)

Directions:
Place the radicchio and the kale on the plate, add all toppings, top with dressing.  Serve & Enjoy!

Add the Radicchio & Kale to the plate
Add the radishes
Add the celery
Add the zucchini
Add the cucumber
Add the mushrooms

Add the endive
Add the tomatoes

Add the avocado
Add the carrots
Top with dressing

Steak Gouda Salad

Just a delicious concoction made from ingredients I had in my fridge and steak I needed to cook.

Ingredients:
1 Tbsp Olive Oil
1 lb stewing steak
Seasoning (Brown Sugar Bourbon, Sweet & Smokey Rub, Garlic Powder, Alpine Touch)
3-4 Large Leaves of Lettuce
1 Apple (Cored and Sliced)
1/2 Cucumber (Peeled & Chopped)
1/2 Tomato (Chopped)
Dressing (I used Avocado Ranch)
Shredded Gouda Cheese

Directions:
Add the oil to the skillet and turn to med-high.  Add the steak and seasoning and cook for about 8-10 minutes, cooked about to medium or more if you prefer.
Shred the lettuce and add to the plate.  Place the apple, cucumber and tomato slices on top of the lettuce.  Drizzle the dressing and add the steak over it.  Top by sprinkling Gouda cheese on top.  Serve immediately and enjoy!

Blueberry Walnut Salad

This is the impromptu salad and home made dressing that was created this evening :)  I definitely made this salad on the fly, so I am going to have apologize for the lack of step by step pictures that I am usually able to provide.  Instead you get to see the delicious end result :)

Ingredients:
3 Large Leaves of Lettuce (Torn)
1/2 Tomato (Quartered)
1/2 Apple (Sliced)
1/2 Zucchini (Chopped)
1 Carrot (Peeled & Grated)
2 Tbsp Walnuts
1 Tbsp Dried Blueberries (or Cherries or Cranberries)

Dressing for 1 serving:
1/8 Cup Fine Red Wine Vinegar
1/8 Cup Wild Maine Blueberry Jam (I love the one from StoneWall, because it has copious amounts of actual whole blueberries within the jam)
1 Tbsp Orange Emulsion
1 Tbsp Dried Mix

Directions:
For the dressing all all ingredients into a small bowl and mix thoroughly, set aside.
Create the salad by placing the ingredients on the place in the order they are listed.
Top with the salad dressing.  Serve & Enjoy!
