Apple Glazed Pork Scallopini

Glazes are always a great way to ensure that you end up with a savory, flavorful, juicy pork dish.  Pork is always a great dish to add fruit to because it goes really well with a little bit of a sweet flavor.

Ingredients:
5 Tbsp Butter
3 Pork Scaloppinis
Seasoning ( Mediterranean Sea Salt, Tarragon, Basil)
1 Large Apple (Cored & Sliced)
3 Tbsp Apple Jelly (You can also use jelly as I originally intended to use)
2 Tbsp Sugar

Directions:
Add 2 Tbsp Butter to a skillet.  Add the pork and season generously on both sides.  Cook on med-high until browned thoroughly (About 8-10 minutes per side).  Soften the butter and mix with the jelly & sugar.  Add the glaze and apple slices to the pork.  Turn the heat down to low and mix thoroughly.  Simmer for about 5 minutes to ensure the glaze has soaked into the pork.Serve with the apples and glaze.  Enjoy!

Steak Nachos

If you have been to my house for dinner enough times, you are bound to end up trying my signature steak nachos.  There is nothing complicated to it, but they are the most delicious of all the nachos that I make.  Something about steak and cheese and anything else that is just plain awesomeness!  Enjoy!

Ingredients:
2 Tbsp Olive Oil
1 lb Stewing Steak
Seasoning (Montreal Steak Grill Mates and Cumin)
Chips (I used Hint of Lime)
Salsa
Sour Cream
Tomatoes (Chopped)
Green Onions (Chopped)
Black Olives (Sliced)
Avocado (Sliced)

Directions:
Add the oil to a skillet, and then add the steak and seasoning.  Cook on medium heat for about 7 minutes until cooked to desired temperature.  While cooking, prepare the other ingredients that need to be sliced or chopped (Tomatoes, Green Onions, Black Olives, and Avocado).  Arrange the amount of chips you want on a plate and add the cheese, steak and green onions.  Microwave for about 35 seconds or until cheese is melted.  Add the salsa, sour cream and remaining toppings.  Serve & Enjoy!   


Add the oil, steak & seasoning to the skillet
Prepare the toppings
Cook the steak to the desired temperature
Add chips, cheese, steak & green onions to the plate
Melt the cheese in the microwave
Add remaining toppings and enjoy

Raspberry Balsamic Glazed Chicken

Raspberry Balsamic Glazed Chicken

Ingredients:
2 Tbsp Butter
4 boneless skinless Chicken breasts
Salt & Pepper (I use Alpine Touch)
Oregano
Tarragon
1 Large Red Pepper sliced
1/2 Cup Vinegar (Balsamic is what is called for but I used White Wine Vinegar to make it sweeter)
1/3 Cup Chicken Stock
1/2 Cup Fresh Raspberries (You can substitute thawed frozen berries)
Thyme

Directions:
Melt the Butter in a large skillet over medium-high heat.  Season the Chicken with the Salt & Pepper, Oregano & Tarragon.  Add the chicken to the skillet and cook until browned on both sides 5-8 minutes depending on the size of the chicken breasts.  Transfer to a plate (store in microwave to keep warm).  
Add the red pepper slices to the skillet and reduce heat to medium, cook until softened about 5 minutes.  Add the Vinegar and raise the heat, cook for about 3 minutes to reduce the vinegar to a syrupy state.  Whisk in the chicken stock and cook for another 1-3 minutes.  
Return the chicken breasts to the skillet and spoon the sauce and peppers over them.  Simmer for about 5 minutes.  Add the raspberries and thyme, swirl around to coat the raspberries.  Serve the chicken slices with sauce and raspberries on top of it.  Enjoy!
