Easter Ham Recipe

This Easter I wanted to make a delicious ham, since I didn't get to for Christmas due to one of my guests being a non-pork eater.  Easter provided me with the perfect opportunity to cook one up.  I always love sweet or smokey ham, and went with sweet this year.

Ingredients:
Ham (bone in, the size is up to you, mine was almost 8 lbs)
Brown Sugar
Honey
Pineapple (pare off the outside)
Toothpicks
Cherry Coca-Cola

Directions:
Preheat the oven to 325 degrees.  Get a deep oven safe pan and line with tinfoil.  Place the ham fat side up.  Cut the pineapple and set aside.  Take the brown sugar and rub generously all over the exposed part of the ham.  Drizzle with honey.  Take the pineapple slices and stick all over the ham to cover.  Attach with toothpicks.  Drizzle over the pineapple with honey.  Pour the Cherry Coke all over the ham until almost filling the pan.  Cover with foil and place in the oven.  Cook for 15 minutes per pound.  Remove the foil when 30 minutes of cooking time remain and continue to cook.  Take out of the oven and allow to cool for about 10 minutes before carving.  Enjoy!

Cover with tinfoil and place in the oven

DIY: Ombre' Egg Dying

After a failed attempt at shaving cream dyed eggs last Easter, I was very excited about the Ombre' style Egg Dying.  I figured that it looked really awesome and really easy and almost foolproof...  Apparently the "almost" was the key word for me.  As I only own gel food coloring it seems to be the bane of my egg dying existence, and once again was ineffective in this year's egg dying.  The ombre' method theoretically should work but given the directions that I came across it did not work for me.  I suggest using regular food coloring that is not as thick or as vibrant and not wasting a ton of good gel food coloring on this.  

Supplies:
Hard Boiled Eggs
Food Coloring(not gel)
Cups

Instructions:
Place eggs into cups or containers that will allow them to sit upright.  Add enough warm water to cover about a quarter of the egg.  Add enough food coloring for the color to show darkly in the water.  Let sit 10 minutes and then add enough water so that the eggs are now half covered.  Let sit for another 10 minutes and cover up to the 3/4 mark.  Sit for another 10 minutes and cover completely.  After 5 minutes of total immersion you can remove to dry. 
*Keep in mind that 40 additional minutes in warm water may cook the egg yolk a bit more.


Get some cups to put your eggs in and fill them up 1/4 of the way up the egg
Take a minute for an assistant pose :)
Add food coloring carefully to the water so that it is dark enough to show through the water

After 10 minutes add water up to the 1/2 mark on your egg (this did cause my pink egg to fall)
Be excited about the process
After 10 additional minutes add water up to the 3/4 line on the eggs
After 10 minutes cover completely
Remove to dry

Be happy about how pretty your eggs look
You can see some separation lines on a few but the ombre' effect was not there for me, at least they are still pretty

Oz: The Great & Powerful

Having wanted to see this one for quite some time, I was very happy to finally find the time to watch it last night.  I am a huge James Franco fan and it had some other fantastic actresses and voice actors as well.  The cinematography/CGI was beautifully done and I give the highest of honors to it.  The movie started out so beautifully and when OZ gets to Oz initially you feel like he may have made a wrong turn and ended up in Wonderland...  Unfortunately by the time he gets to the Emerald City things start to get weird.

Oz The Great and Powerful is about the Tale of Oz from the Wizard's point of view and is a prequel to he Wizard of Oz, and Return to Oz.  It was released in 2013 and directed by Sam Raimi.  The film is based on the Oz novels of L. Frank Baum and is supposed to be set at a time-frame 20 years previous to the 1939 film The Wizard of Oz.  Oscar Diggs (otherwise known as Oz) is a struggling traveling magician who arrives in the Land of Oz in a similar fashion as Dorothy (by way of tornado) while riding in a hot air balloon.  Oscar finds himself recruited to restore order to Oz and in the middle of a three-way fight with powerful witches Theodora, Evanora & Glinda.

Despite mixed reviews it was considered a box office success with a general theatrical release date of March 8, 2013.  It grossed $493 million worldwide, $234 million in the US & Canada.  Oz is supposed to be dated in teh year 1905 (placing it 20 years before the original film The Wizard of Oz).

There are quite a few instances of paying homage to the original film in this one.  Such as the starting out of the film in Sepia and then fading into color once Oscar arrives in Oz.  Cameo appearances of characters in Kansas that are also characters in Oz.  Annie (when in Kansas) informs Oscar that she has been proposed to by a man name John Gale...  Possible relation to Dorothy Gale.  The rest you will have to view for yourself as they may present themselves as spoilers if you do not know the story.

Frank/Finley: Zach Braff (Scrubs, The Last Kiss, Garden State, Chicken Little)
Also featuring Bill Cobbs, Joey King and Tony Cox)

The original Wizard of Oz was put out by MGM in 1939 as they had bought the rights to it first.  Walt Disney had always dreamed of working on an Oz film and later acquired rights to the remaining books of Oz, which lead him to start working on  The Rainbow Road to Oz with his Mousketeers.  Unfortunately he didn't like the way that it was going and didn't feel that it was worth of the Oz story and it wasn't until after his death that Return to Oz was released becoming a cult classic.

Initially Robert Downey, Jr was sought after as the role of Oz but once Sam Raimi was hired on and discovered the disinterest in the film by Downey they decided to look to Johnny Depp.  Depp declined due to his working on the Lone Ranger at the time and it wasn't until 5 months before filming began that James Franco was signed on for a 7 million dollar deal.  Franco & Raimi had previously worked together on the Spiderman franchise.  Art Director Robert Stromberg (Avatar, Alice in Wonderland) went with an art deco approach to the emerald city.  (This explains why the opening feels like Wonderland).  There were many artistic stipulation placed on this production to include the ruby slippers, the color of green of the original witches skin as well as the mole on her chin,  and they could not use a yellow brick swirl for Munchkinland.  This led to the green of the wicked witch being significantly darker, it has a special name but it could be a spoiler.

On March 7th, 2013, a sequel was confirmed.  Mila Kunis stated that all acting talent had already signed on for a sequel.  Sam Raimi was already made it known that a sequel would be directed by someone other than himself.  The sequel would reportedly NOT contain Dorothy and it was stated that 20 years between the prequel and the original allow for a lot to happen.

Overall I have to say that I give this film 3.5 out of 5 stars.  It was good, but not fantastic.  As I previously stated, it started out SO well with the lead up to Oz and then things started to get weird, there was a weird kind of love triangle interest int he beginning of meeting both witch sisters which was kind of left hanging in the air.  The movement of the witches was very irritating to me during battles, they were very jerky and much too fast and strange feeling.  Glinda didn't have the feel of being as good as you wanted her to be, I felt like she was more on par with the Wicked Glinda which was ok, but not expected.  Overall the story was really good when it flowed consistently, with the background of how the Wicked Witch came to be and with the Wizard of Oz.  However there were some seriously choppy parts that felt like things had been cut or taken out and then never smoothed over to make the movie flow as one.  I loved the use of the brain as opposed to magic and the belief in something to make something come to pass.  I also loved the costuming in the movies, some very awesome takes on witchy dresses and Oscar look svery dapper throughout in his suits.  It was a great backdrop as to how the Wizard became what we saw in the Wizard of Oz.  The scenes were very beautiful but the weird jerkiness and some of the witch battles that had some really tacky feeling CGI as well as choppy parts leave me with a 3.5 for this movie.  If you are a lover of Oz though it is definitely worth the watch...  but maybe not more than once.

Chicken Quesadillas

I am always trying to do different things with chicken, because I feel like it can be one of the more boring meats and it's harder to eat leftover for me.  Flipping through recipe ideas I got a craving for quesadillas and remembered that I had a nifty quesadilla maker sitting on a shelf in my garage that was being severely under utilized.  *Don't get discouraged if you do not own a quesadilla maker, you can still make this recipe just fine in a pan on the stove.  This is a very quick and delicious recipe.  Enjoy!

Ingredients:
2 Tbsp Butter
2 Chicken Breasts (Thinly Sliced)
Seasoning (Alpine Touch, Lime Pepper, Cumin Powder)
Pack of flour tortillas
Shredded Cheese
Toppings (Mix and match in whatever way you desire)
Red Pepper (Seeded & Sliced)
Green Onions (Chopped)
Avocado (Seeded, Peeled & Sliced)
Salsa
Sour Cream
Cilantro

Directions:
 Add the butter to a skillet and place the sliced chicken into the pan, add the seasoning  Cook until down all the way through.  Pre-heat the quesadilla maker (or the pan if you prefer).  Get a tortilla for the bottom of you quesadilla.  Sprinkle shredded cheese on the bottom and top with a couple pieces of the cooked chicken.  Add the accoutrements (peppers, green onions, avocado) and top with a final sprinkle of cheese.  Place on the quesadilla maker (or in the pan on med-high) and add a top tortilla to cover.  Cook for about 30-60 seconds to warm all the way through (if cooking in a pan flip after 30 seconds and cook for another 30, once you start to see melted cheese you should be good to go).  Remove and cut along the grooves made by the quesdilla maker (if using a pan just cut to preference).  Serve with salsa and Sour cream with cilantro on top.  Enjoy!

Add the chicken and seasoning to the butter in the pan
Cook thoroughly
Get out your bottom tortilla and add cheese and chicken
Add the peppers, green onions & avocado
Top with more cheese and place on the quesadilla maker)
Add the top tortilla
Cook for 30-60 minutes
Remove and cut along the grooves
Serve & Enjoy!

Zumba: Fitness Rush for XBox Kinect

I have actually had this workout "game" since Christmas and I was so in love with World Party that this one has been collecting dust.  Tonight my World Party was acting up on me and so I decided to get some use of out Rush.  Let me start by saying that if I thought World Party was a step up in the
workout game, it is nothing compared to it's predecessor Rush when it comes to an intense cardio workout. 

After being used to Zumba Core & World Party which both came after this one (which was released in 2012), the graphics are definitely not as advanced and the kinect tracker isn't as finely tuned, but the workout I did had the tempo upped so much I was feeling it the whole time.  I have been wanting to get my money's worth of cardio in between working out my Jillian Michaels and I wanted a more intense cardio workout, I was tailoring world party but it's not as easy to get a good cardio workout with the shorter song lengths on world tour (in my opinion) so now I seem to have found my solution.

After being used to the music diversity of World Tour, I can definitely say that there is a much stronger Brazilian/Spanish flair to the music on Rush.  It was aptly named though as you do definitely get a "rush" from the workout.  I highly recommend Zumba Rush for anyone looking to get an intense cardio within a limited amount of time.  It does unfortunately feature the Brazilian woman back that I swear counts in 6 count instead of 8 count, but some of her moves/techniques are similar to Core so I had an easier time picking up her workout.  I also noticed some great Hip Hop Ab moves thrown in on one of the songs.   Luckily the re-packaged versions of ZUmba Rush do include the Bollywood and Hip Hop pack add-ons built in to the game to give you more choices and more dance styles.   

Zumba Rush does allow for tracking of up to two people at a time if you want to have a workout partner.  As with previously reviewed ZUmba workouts, this one does allow you to create a custom workout.  It features the standard three-tiered workout choices with a Short/Easy Medium and Long/Hard options for your choices.  Typically a short workout runs 20-25 minutes with a Medium workout in the 30-40 minute range and the long workouts are 40+ minutes.  Zumba Rush does also have the move queue indicator to let you know what is coming next, it doesn't come on as often as it does on Core, but seems to give you better lead time than World Tour.  You do still get the track your workout features, with achievements and calorie tracking if you want to utilize them.  as with any other ZUmba games you can always take the time to learn the steps if you aren't stubborn like I am and just want to learn as you go haha. 

Overall I give this workout game 4.5 Stars.  The overall workout receives 5 stars, but the older graphics slightly slower tracking takes away half a star.  Once you get into it you don't notice.  If you like workout out at home and/or without shoes like I do than this is a wonderful option.  I have been having such a hard time finding good intense cardio workouts at home without any equipment (treadmill, eliptical, etc) and now I am so pleased to have this wonderful option that had been hiding out the whole time.
*Note I did read that this is also available on the Wii but that it did not have a lot of the same great features and did not work as well as it was designed specially for Kinect

Pear-Apple-Berry Fruit Protein Smoothie

I make a lot of fruit protein smoothies, and they end up different every time, depending on what my ingredient choices are around the house.  I keep trying to remember to write the recipes down so that I can go back and make them again, or not make ones that didn't end up as well as I would have liked.  Tonight after my workout I was putting one together and decided it would be a good time to share this kind of recipe with the readers of my blog.  Enjoy!  And let me know if you have any comments or suggestions. 

Ingredients:
1 apple (cored and sliced)
1 pear (cored and sliced)
1/4 Cup Mandarin Oranges
1 Cup Frozen Fruit (Strawberries, Blueberries & Mangoes)
1 Scoop Vanilla Protein Powder
1 Cup Rice Milk

Directions:
Add the frozen ingredients into the blender first and then add the protein and the remaining fruit, top with the milk (This helps ensure a better overall blend).  Blend on medium/high speed until well blended and serve.  This gives me 2 smoothies to enjoy so that I can take care of 2 days at once, refrigerate the remaining smoothie.  Enjoy!


Add in all of the ingredients
Blend until mixed well
Serve & Enjoy!

Lessons Motherhood has Taught Me

In case you are interested in getting a sneak peak into some of the lessons I have had to learn as a single mother, I wanted to share this with you.  Of course there are millions of tiny little lessons and this just touches upon the very tip of it, I thought it might be nice to hear some of your lessons as well.

Within the first month of me going from full-time military to a civilian contractor in support of the military, I surprisingly discovered that I was pregnant.  From that moment on, I knew that to go through with this meant that I would be doing it completely on my own.  At the time I wasn’t sure how this was going to work with my job and with being in the middle of gearing up for a house move.  I admittedly knew very little about being a mother and the costs entailed and decided that I needed to make some life altering choices to make this work for me.  I decided to go with a much lesser house to have a lower rent payment and I was doing what I could to prove myself at work so that I wasn’t in a position to lose my only source of income now that I was going to have another mouth to feed.  I was actually gearing up to go back to school full time at this time as well and I had to put that on hold.  It took several years for to find any sort of confidence in my “mommy” skills and to find the best routine and security in my job.  I did end up changing companies for a better family benefits package and more job security.  Now that I have established more security and stability, I no longer need to put school off, I am ready to go back.  I have already been setting aside time in advance to ensure that I can succeed in this venture.

Before I get ahead of myself, I guess I better get back around to describing what I have learned from being a mother.  I have learned more than can ever be put into words.  I learned what the true meaning of time management is.  You don’t realize how much free time you are wasting in life when you are younger until you forget what sleep is and pray for an extra 5-10 minutes in the morning to make it to work on time.  I have learned what it truly means to be selfless and sacrifice for another human being.  Previously I had thought that I was being selfless in life, but until I was a mother I never knew how easy it would be to put someone else needs, future and wants before my own.  I learned what true unconditional love is.  I have always had love for animals, but never had the love I felt for a person been unequivocally unconditional.  I experienced the highest levels of stress and I learned the definition of “mommy guilt.”  I have fought so many internal battles as I have grown as a person and entered into the process of learning what it is like to care for another person’s every need; to wish any pain and any hurt could be taken into me so that my son would never feel a second of discomfort.  As my son has entered into toddler stage I have felt stress at the constant pushing of limits to constantly re-evaluate the way that I teach him in the best way possible for him.  The search for the best way is new and different every hour; some days every minute.  I have learned that in times of high stress I can reach anger much too quickly and that to yell can make me feel like the scum of the Earth.  I have learned that I need to be easier on myself, that some days are good, and some are bad.  Other lessons I have learned include learning how to take that deep breath and walk away until I am more level-headed.  I have learned that I am not alone and that as our family of two, we are a team and must move forward together.  Time management has become my best friend and has made me more efficient than I ever knew I could be at the most menial of tasks.  I was always good at multitasking, but I have become a machine now.

Most importantly when it comes to incorporating these lessons into being a prospective student, I now know my limits, I know what I can and can’t handle and I know that pursuing education further is the best plan for me to achieve long-term security for my small family.  The heightened confidence that I have achieved as a mother will be incorporated into bolstering my passion, drive and motivation to successfully accomplish this goal.  I have the ability to do this at this time in my life, as routine has become second nature.  I know that the longer I wait to get started, the more that I would enter into regret for lost time.  As I have learned so many lessons thus far as a single mother, I relish the idea of all of the new lessons I will learn in the future.

Party Hat Bowling

Due to some inclement weather on my son's third birthday we had a lot of leftover party supplies.  On occasion he likes to dig them out and play with them.  Sometimes he sets up a little birthday party, but lately he has been setting up a rough boy-version of bowling.  Something I have affectionately begun calling "Party Hat Bowling."  To play, he sets up the hats in a semi-sort of bowling pin style and then he takes the box that held the supplies and throws it at the party hats trying to knock them over.  Any knocked over result in being quite pleased with himself.  This games gives him lots of excitement.  So I wanted to share this hilarious game with you and to show you some photos and videos for an example.  Enjoy!
