DIY: Valentine's Ideas For Women

With Valentine's Day fast approaching I know that I will be spending another year without a Valentine.  I do not say this with regret, sadness or loneliness, just as a statement of fact.  I bring this up only because I want to do something special for myself.  I want a nice homemade gift from one of my favorite people in the world me!  And then an even more favorite person in the world can help me, my son of course!  So in the true crafty spirit I have found a few DIY ideas that will get the creative juices flowing and allow Liam and I to choose something awesome to create that I can enjoy on Valentine's Day!  I decided to write a blog about it because I know that I am not the only woman out there that loves a more personal gift, and what better time to receive than Valentine's.  Here are some of the top ideas that I have come up with and will pick one to do a step-by-step blog on in the spirit of Valentine's Day!  I would love to see other DIY projects that anyone else has come across and hear about any of your attempts to recreate these ideas!  Good luck and I hope that in whatever capacity you spend V-Day in that it is full of happiness and love!

Over-Protectiveness: More Freedom Improves Child Development

You can never know what kind of parent you will be until parenthood is thrust upon you.  Whether or not you "plan" to have a baby there is NOTHING, I repeat nothing that can fully prepare you for what it will actually be like until you are there.  This is absolutely true no matter how many days you have been a parent...  Each day presents it's own unique set of fun, challenges, learning opportunities, mistakes, victories, and of course more love than the day before.  With that being said let's talk about this crazy thing that happens from the second you see that little one for the first time and is sealed forever from the first moment they are in your arms: over-protectiveness.

You suddenly feel the need to protect this precious life with every part of your mind, body, and soul.  it is something ingrained in us and it is a constant battle of balance as a parent.  You want to make sure that your child is safe, but you don't want to be SO over-protective that they don't learn anything either.  You want to wrap them up in a bubble suit before they go outside or lock them in the house (ok I didn't feel this way but many parents do).

Any moment that your child is spent in pain of any kind you feel crazed inside.  You would do ANYTHING to feel the pain for them, for them to never know sickness, or cuts or bruises.  And then you have to step back and realize that all of these things bring about knowledge and experience for them.  I know that sometimes a child will need to be burned to truly understand that something is hot.  You can tell them a million times but until they touch the oven or the burner or a flame, they will not be able to fully comprehend what "hot" really means without experiencing it for themselves.  Now hopefully at some point in their life they will have managed to acquire enough knowledge, experience and common sense to not need to experience EVERYTHING to learn from it.  Hopefully there will come a time when they can learn from observing those around them as well to avoid many negative paths that they could but don't have to travel.

Well let's get to the heart of the matter, at least as it pertains to the message I wanted to get out with this blog.  I recently came across an article about schools in New Zealand that have decided to take away all of the rules as they pertain to recess on the play ground.  They were having trouble with kids paying attention, sitting still, bullying one another etc.  From the outside looking in, one would think that all hell broke loose and that supervision had long since fled.  They would see tree climbing, skateboarding and *gasp* barefooted children playing outside in the dirt!  The horror (in case you don't know me in real life I mean this in the most sarcastic of ways)!  This school was actually letting kids go out and be kids outside in nature!  Of course there was still supervision to prevent any serious harm and to be there should anyone scrape a knee or need help in one way or another. 

However more amazing than actually letting kids get outside and be kids was the resulting aftermath.  After being allowed the freedom to play without strict rule following and constant berating for stepping out of line; these children were doing BETTER in school.  They were paying attention, exuding more confidence in their work, participating more.  Bullying dropped to a level of being nearly nonexistent.  More surprising the level of serious injuries also saw a decline! 

By being given the chance to learn around them and to learn what the boundaries where for themselves through experience they were able to more accurately learn the physical limitations of their own bodies.  They learned what "hot" really meant, what falling out of a tree, or off of  skateboard when going to fast was like.  And without anyone shoving the information down their throat or limiting their play to a level when any playground equipment became a "danger" they were able to set healthy limits on themselves!  These children were learning things that no amount of reading or hearing about could EVER teach them.  They were experiencing the world for themselves in a supervised but not overprotective controlling, rule-ridden environment. 

Of course my initial thought at reading this was how awesome this idea was, and how can I ensure that my son goes to a school of an obviously high intelligence in the way to "teach" and view children.  Then my second thought was: No wonder this is in New Zealand, if it was in America people would freak out and sue the school, etc.  Which made me wonder what the HECK is wrong with us.  Ok so I wonder this ALL the time.  But the whole legal system has become such a joke....  but that is going WAY off topic. 

The fact of the matter is that we live in a over-protective, over-medicated society and we have gotten lazy and selfish.  Instead of letting kids BE kids, so many people want to diagnose a healthily active child (especially boys) with having ADD.  "Sorry you son can't sit still for 4 hours at a time when he is 2, he must have ADD." What?  he is 2, he should be required to do something like that at his age, it's ludicrous and bad for him.  He needs to get around and learn using all of his senses.  He needs to be allowed to be 2.  Children are young for such a VERY short time.  Why take that away from them.  They need this foundation of learning through senses to have as many tools to make it in the world as an adult as we can provide them.  Yes we should teach them things, but in an age-appropriate way.  Counting, let's count the rocks in a line, or steps we have to walk up to go down the slide, or the petals on a flower, etc.  Colors, let's write the name of each color with the coordinating sidewalk chalk or get messy with paint (washable is always best) on some construction paper.  Let's let them learn as children CAN learn.  Let us as parents and teachers and anyone else who will ever have a moment to influence a child let them learn how to TRUST themselves, and their instincts.  Let's help them to learn their limitations and then how to strengthen themselves physically, mentally and spiritually to overcome any obstacles that they do encounter.  Let's give them role models worthy of attaining.  Let's teach them how the entire world is a learning experience, but also how to be safe from grave or serious harm.  Let's teach them how to work hard and reap the rewards with the freedom of play :)  Heck, do it for our own sanity, especially parents, teachers of the younger children, let them exercise and expend energy!  It will make an amazing difference in the behavior of a child!

Celeste & Jesse Forever

I actually watched a non-children's movie the other night and wanted to write a review on it since it wasn't all that bad.  Celeste and Jesse Forever is about married couple Celeste (played by Rashida Jones) and Jesse (played by Andy Samberg).  Now of course if you know anything about this hilarious duo you would be expecting a great comedy.  Rashida Jones is from Parks & Rec, The Office, I Love You Man, etc.  Whereas Andy Samberg is from such awesomeness as The Lonely Island band, SNL, Brooklyn Nine-Nine, etc.  So I was definitely expecting a LOT of laughs.  Although there was comedic relief in this film, it had a more serious tone.


Celeste and Jesse Forever is about high school friends who got married and are now about to hit 30 after 6 years of marriage and they have been separated fort he past 6 months.  However they still do just about everything together and are the best of friends.  Jesse is still madly in love with Celeste and she is thinking that she wants to find her own independence and wants "more" out of life.  It is considered a romantic comedy but it seemed like there were a lot more serious and darker issues than one may encounter in most of the light-hearted romantic comedies that we think about today.

Rashida Jones also had a big hand in writing the  screen play for this movie that came out in 2012.  It was well received by critics and I feel that it had more depth than what I would have expected.  Jones' character shows an immense amount of character devilment throughout the movie.  More than you would normally see in the allotted time period.  Samberg also shows that he can pull off a serious role very well even if he does seem like he isn't overly happy throughout the entirety of the movie.  Rashida's wit shines throughout the film and really owns her character, and at times I could definitely see parts of myself in her at this point in her life.

Other Characters that played a role in this story include
Beth: a mutual friend of the couple played by Ari Graynor (The Fringe, The Sopranos)
Tucker: Beth's Fiance and also a mutual friend played by Eric Christian Olsen (NCIS:LA, Hero Factory, Community)
Scott: Beth's Boss played by Elijah Wood (Lord Of the Rings Trilogy, The Hobbit, Wilfred)
Riley: A Pop Star that Celeste bashes and then must represent played by Emma Roberts (American Horror Story, We're the Millers, Aquamarine)

Overall I give this movie 4 Stars.  It was not what I expected but turned out better than I thought it would.  Rashida Jones and Andy Samberg actually make a fairly believable couple.  It was kind of depressing but also showed a lot of growth and learning in the characters.  I really wasn't fond of the abrupt ending, I was rooting for something happier, but instead it went with more of a realistic in terms of life type of wrap up.  I definitely recommend watching it, although it will be something very different for both of these main character to show you sides of them you may never have expected.

Black Forest Pavlova: January's Winning Dessert

This is an Australian recipe that I was really looking forward to making and found that it looked so amazing and delicious.  When it ended up being the winning choice, I was very excited.  I did have to improvise a few ingredients due to inability to locate but little did I know that my problems were just beginning.  There were a few minor conversions to be made with temperatures from Celsius to Fahrenheit, but my main problem came with the hand mixing.  I had completely forgotten the properties of plastic and how they affect mixing when needing stiff peaks.  Not mixing in a glass bowl did ruin my eggs, and since the recipe called for 8, I didn't have enough.  However not being one to give up, I decided to go with what I had and try to bake it anyway.  So of course it may not have been as pretty as it was meant to be, it did turn out tasting amazing!  And it is a reminder for everyone out there that if you are mixing anything that calls for "stiff peaks" be sure to use glass instead of plastic.  Here is the recipe, enjoy!

Ingredients:
Parchment Paper
Glass Mixing Bowl


For the meringue.
8 egg whites
2 cups granulated raw sugar
2 tablespoons unsweetened cocoa powder (I am not sure what the difference is between this and Dutch cocoa but I couldn't find Dutch Cocoa anywhere)
1 teaspoon vanilla essence

For the topping.
2 cups thickened (whipping) cream
2 tablespoons strong espresso coffee
1/3 Cup Sugar
1 tsp Almond flavoring
1 10 oz jar of Maraschino Cherries (Morello cherries could not be located)
3/4 cup dark chocolate curls (To make chocolate curls run a potato peeler down the edge of a block of chocolate.)

Directions: 
Preheat oven to 420ºF Place a sheet of baking paper on two large baking tray and draw 8" circles.
Separate your eggs making utmost care not to contaminate the egg whites with any egg yolk. Any fat in the egg whites will prevent them from beating properly and will weigh them down.
Beat your egg whites in a glass bowl until they are stiff and add your sugar slowly along with the vanilla essence, one tablespoon at a time and beat until stiff peaks form. Turn your bowl upside down to make sure the whites are stiff enough. If not, beat another minute or so then check again.
Sift the cocoa powder into the raw meringue and fold through carefully ensuring you leave streaks of cocoa rather than fully incorporating it.
Shape the meringue into the two rounds on the baking paper/trays. Place meringues into oven and immediately turn temperature down to 240 degrees. Bake for 60-90 minutes then turn off the oven, do not remove meringues until oven is cool.

Topping:
Beat the cream, coffee, almond and sugar until stiff peaks form. With a silicone spatula spread half of the cream over the bottom meringue, place cherries on the cream and sprinkle half of the chocolate shavings over the meringue.
Place the top meringue layer over the bottom. Spread the remaining cream over it along with the cherries and chocolate shavings. Drizzle cherry syrup from the jar over the entire pavlova.

Some of the delicious starting ingredients
Draw 8" circles on your parchment paper
Beat the eggs until frothy
Take a smile break of your sous chef
Have a silly break
Add the sugar and almond and beat until stiff peaks form (This is where my transfer to a glass bowl could not save the meringue)
Taste tester
Swirl the cocoa powder into the meringue and shape onto the circles (As you can see without thick meringue this didn't work out for me, so I decided to just pour it onto my baking sheets and hope for the best)
Remove when oven is no longer hot (I only cooked for about 60 minutes when it started to stiffen due to the thinner surface area, I didn't want to overcook it)
Mix the cream, espresso, almond and sugar
Mix until stiff peaks form
Excited to taste it!

Lay down a layer of the meringue (Mine was crumbly but still delicious)

Add a layer of the espresso cream, cherry and chocolate curls
Top with more meringue
Finish off with a final layer of cream, cherries and chocolate curls, serve & Enjoy!  (Regardless of my meringue disaster it still tasted amazing and was a treat to eat!)

Sauteed Scallops: January's Winner!

This is the winning Main Dish recipe from this months vote!  There were a lot of close calls, but this Scallops won out by a single vote in the end.  This was very quick and painless and definitively delicious!  I definitely recommend it to anyone who is into scallops. 

Ingredients 
16 Large Sea Scallops (about 1.5 lbs or a little less)
1/2 tsp Alpine Touch (or Salt & Pepper)
1 1/2 Tbsp Olive Oil
2 Tbsp Butter
1/4 Cup Fresh Parsley (Chopped)
2 Garlic Cloves (Minced)

Directions
Season scallops. Heat oil in a large nonstick skillet over medium-high heat. Add 8 scallops; sauté 2 1/2 minutes on each side or until browned. Set aside, and keep warm. Repeat procedure with remaining 8 scallops. Wipe pan clean with a paper towel.
Add butter to the pan; reduce heat, and cook until the butter melts. Stir in parsley and garlic, and cook 15 seconds. Return scallops to pan; toss to coat.  Serve & Enjoy!

Season the scallops and add to the oil, cook until browned on both sides
Saute' the garlic and parsley
Return scallops to the pan and toss to coat
Serve and Enjoy!

After checking to ensure that the shirt would properly cover my girth, I walked from my trailer to Wal-mart with the shirt on and was immediately approached by women. Since I was unable to Facetime for help (less than ideal Wifi access) and had fallen over during my struggle, it wasn't until the mailman found me on the front porch that I was able to call for help. "Contrary to the suggestions of a particular reviewer, this whistle should not be inserted rectally. The benefit of this product is that it is an oral whistle that makes rectal sounds. The instructions explain this but some people are just too busy to read, it seems. It is for this reason that buying this product "used" is not recommended.

How To Make Bubble Tea

As my Bubble/Boba Tea addiction has been spreading, I have been getting many inquiries about what it is and how to make it!  I previously wrote a blog about the background of the delicious drink and figured it was about time that I wrote a step by step instruction blog.  Enjoy!  And please let me know if you have any questions.

Today we decided to make Apple Cinnamon Honey Dew Bubble Tea :)  it was the most delicious combination of flavors yet!

Ingredients:
2 Cups Pearl Tapioca
3 Tbsp Honey (You can also use simple syrup if you prefer)
Apple Cinnamon Tea
Milk (I used Rice Milk)
4-5 squirts of Honey Dew flavored syrup
Wide Straws (Straws with Tapered ends make getting any remaining tapioca easier at the end of the drink)

Directions:
Get a sauce pan to a roiling boil with about 4 Cups of water.  (It is imperative that the water is boiling before you add the tapioca or it will turn into goop)
Prepare Tea
Strain out 2 Cups of Pearl Tapioca to shake off any loose powder.
Add the pearl tapioca to the boiling water and stir continuously for about 10-15 minutes (they should be a little bit chewy).
Pour into a strainer and run cold water on the tapioca to keep from sticking together.
Add 3 Tbsp Honey to a Container with a lid, heat up for about 15 seconds.  Add the tapioca to the Container and top just barely with cold water.  Stir until the honey is thoroughly mixed in.  
Pour the brewed tea in to a Large glass (possibly a pilsner glass) about 3/4 or a little more full.  Add 4-5 squirts of the Honey Dew syrup.  Put 2-3 Large spoonfuls of the Tapioca into the glass.  Top off with any kind of milk you would like, I used rice milk.  Place the straw into the cup and stir thoroughly.  Enjoy!

First you need the Tapioca! 
Put about 2 Cups of tapioca in a strainer and shake it around a little bit to get rid of any loose powder
Select a tea that goes with the flavor you want to use
Bring water to a rolling boil
Brew the tea
Add the tapioca and stir continuously
Pour the tapioca into a strainer and run cold water over top
Get the honey out
Add honey to a seal able container
Microwave for 15 seconds
Pour the tapioca into the container and top with water
Pour the brewed tea into the serving glasses about 3/4 of the way full

Add the honey dew syrup to the tea
Add 2-3 spoonfuls of the pearl tapioca
Top with Milk
Pick a wide straw to use
Add the straw to the glass, stir thoroughly and serve!
